  • Total Time: 1 hour (Stove Top) / 6-8 hours 20 minutes (Slow Cooker)
  • Yield: 6-8 servings 1x

Ingredients

Scale
  • 1 rotisserie chicken (fully cooked, approximately 2 1/2 pounds), still on the bone
  • 12 cups chicken broth
  • 4 celery stalks, chopped
  • 45 carrots, sliced
  • 1 onion, diced
  • 1 teaspoon garlic powder
  • 2 teaspoons dried parsley
  • 1 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1 bay leaf
  • 1/2 teaspoon sea salt
  • 1 teaspoon cracked black pepper
  • 2 cups dry pasta
  • 1/4 cup corn starch (or arrowroot powder as an alternative)
  • 1 tablespoon olive oil (for stove top)

Instructions

How to Make Chicken Noodle Soup on the Stove

  1. Sauté the Vegetables: In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Add the chopped celery, sliced carrots, and diced onion. Sauté until the onions become translucent, about 5-7 minutes.
  2. Add Broth and Spices: Pour in the chicken broth and add salt, pepper, garlic powder, bay leaf, thyme, oregano, and parsley. Add the shredded chicken and the whole chicken carcass to the pot.
  3. Simmer the Soup: Reduce the heat to medium and bring the soup to a low boil. Let it simmer for about 30 minutes, or until the carrots are tender. During this time, use tongs to remove the chicken bones from the pot.
  4. Cook the Pasta: Add the dry pasta to the pot and cook for about 10-15 minutes, or until al dente.
  5. Thicken the Soup: In a small bowl, whisk together 1 1/2 to 2 cups of soup with 1/4 cup corn starch until fully dissolved. Slowly add this mixture back to the soup and stir to combine. This will thicken the soup slightly, giving it a comforting, rich texture.
  6. Serve and Enjoy: Ladle the soup into bowls and serve hot. Enjoy the warm, savory flavors with your favorite crusty bread or crackers.
