How to Make Chicken Noodle Soup on the Stove
- Sauté the Vegetables: In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Add the chopped celery, sliced carrots, and diced onion. Sauté until the onions become translucent, about 5-7 minutes.
- Add Broth and Spices: Pour in the chicken broth and add salt, pepper, garlic powder, bay leaf, thyme, oregano, and parsley. Add the shredded chicken and the whole chicken carcass to the pot.
- Simmer the Soup: Reduce the heat to medium and bring the soup to a low boil. Let it simmer for about 30 minutes, or until the carrots are tender. During this time, use tongs to remove the chicken bones from the pot.
- Cook the Pasta: Add the dry pasta to the pot and cook for about 10-15 minutes, or until al dente.
- Thicken the Soup: In a small bowl, whisk together 1 1/2 to 2 cups of soup with 1/4 cup corn starch until fully dissolved. Slowly add this mixture back to the soup and stir to combine. This will thicken the soup slightly, giving it a comforting, rich texture.
