Instructions
Stovetop Method: Quick and Easy
- Sauté the Vegetables: Heat a tablespoon of olive oil in a large stock pot over medium heat. Add the diced carrots, onion, and celery. Sauté for 3-5 minutes, or until the vegetables begin to soften and become aromatic.
- Add Chicken and Broth: Place the boneless, skinless chicken breasts into the pot and pour in the chicken broth. Stir in the thyme, bay leaf, garlic salt, salt, and pepper.
- Cook the Chicken: Bring the mixture to a boil, then cover the pot and reduce the heat to medium-low. Allow the chicken to simmer until fully cooked, which should take about 15-20 minutes. Make sure the chicken reaches an internal temperature of 165°F (74°C) for safety.
- Shred the Chicken: Once cooked, carefully remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot.
- Add Noodles and Simmer: Add the uncooked egg noodles and an additional 2 cups of water to the pot. Cook for 5-7 minutes, or until the noodles are tender. Remove the bay leaf, give everything a final stir, and serve warm.
