- 2 cups half and half – you can use milk or a dairy-free alternative for a lighter version
- 1 cup fresh spinach – roughly chopped
Instructions
- Sauté the Vegetables: In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped celery, diced onion, minced garlic, and shredded carrots. Sauté for 2-3 minutes or until the onions turn translucent and the vegetables start to soften.
- Combine the Ingredients: Add the diced, cooked chicken breasts to the pot along with the chicken broth. Season with salt, pepper, and thyme. Stir to combine, and bring the mixture to a gentle boil.
- Cook the Gnocchi: Once boiling, carefully add the potato gnocchi to the pot. Allow it to cook for about 3-4 minutes or until the gnocchi floats to the top, indicating it is cooked. Reduce the heat to a simmer and let the soup cook for an additional 10 minutes, allowing all the flavors to meld together.
- Finish with Cream and Spinach: Stir in the half and half and add the chopped spinach. Let it cook for another 1-2 minutes, or until the spinach has wilted and is tender. Taste the soup and adjust seasoning with additional salt and pepper if necessary.
- Serve and Enjoy: Serve the soup hot, garnished with a sprinkle of fresh parsley or grated Parmesan cheese if desired. Pair with crusty bread or a fresh side salad for a complete meal.
