  • 1 teaspoon coconut oil (optional): This helps the chocolate melt smoothly and gives it a lovely sheen.
  • ¼½ cup (64128 g) natural peanut butter, well stirred: Choose a creamy variety that is free of added sugars or hydrogenated oils.
  • ½ cup (60 g) chopped peanuts: Adds the signature crunch you find in a Snickers bar.
  • ½ teaspoon flaky salt (optional): Enhances all the flavors and adds a bit of texture to the final product.

Instructions

Step 1: Prepare the Dates

Start by lining a small baking sheet or a large plate with parchment or wax paper. Remove the pits from all the medjool dates. If you purchase pitted dates, this step becomes a lot quicker!

Step 2: Flatten the Dates

Open each date in the center and gently pull apart the sides so that they lay flat. Arrange the dates on the lined parchment paper, forming the base layer of your snickers bar. Once all dates are in place, cover them with another sheet of parchment paper. Use your hand or the bottom of a cup to press the dates into a single, even layer.

Step 3: Melt the Chocolate

In a microwave-safe bowl, combine the chopped chocolate and coconut oil (if using). Heat in 30-second increments, stirring in between each session, until the chocolate is fully melted and smooth. This usually takes 2-3 rounds. Set the melted chocolate aside for a moment.

Step 4: Layer the Peanut Butter and Chocolate

Spread the peanut butter evenly over the layer of flattened dates. Then, drizzle the melted chocolate over the peanut butter. Use a spoon, flexible spatula, or icing knife to spread the chocolate evenly, creating a smooth layer on top.

Step 5: Add the Finishing Touches

Sprinkle the chopped peanuts over the chocolate layer, pressing them down gently so they stick. If you like, add a pinch of flaky salt for extra flavor.

Step 6: Chill to Set

Transfer the prepared snickers bark to the fridge for about 1 hour, or to the freezer for 20-30 minutes, until it is fully set and firm.

Step 7: Cut and Serve
